Curried Pumpkin Soup
Ingredients:
1 small onion, chopped
1 tsp. olive oil
2 C. Chicken broth (preferably homemade)
1 1/2 C Pumpkin Puree
1 tbsp. lemon juice (optional)
1 tsp. curry powder
1 tsp. sugar
Salt & Pepper to taste
1 - 14oz can coconut milk (homemade coconut milk is ideal)
Instructions:
Sauté onion in oil
Add broth, pumpkin, lemon juice, curry powder, sugar, salt and pepper
Bring to a boil
Simmer 15 minutes
Stir in milk
Heat & serve.
You may add more spices or even some hot sauce to really spice it up a bit.
